Wilted Spinach and Apples

When I worked outside the house I would roll my eyes when others would blog about some great thing they made themselves for lunch. Seriously, how many people are near a stove when lunchtime rolls around during the week? Whatever, you can make this for dinner or lunchtime on the weekend but right now I am going to be honest – I whipped this up for lunch – on a Monday no less.

The ingredients:
2 tablespoons olive oil
salt
pepper
1/4 honey crisp apple
2 cups spinach

The basic preparation:
Heat olive oil and a dash of pepper and salt on high in a medium saute pan on stove. While oil is heating chop 1/4 of an apple into a large dice. Add apples pieces to oil. Mix together for about 1 minute. Reduce heat to medium and add spinach and a few more dashes of salt and pepper. Stir spinach in olive oil to coat and remove pan from burner once the edges of the spinach are barely wilted. Enjoy!
